    Recipe: Sponge Cake by Noopur Tikku

    This is a recipe of the most important cake you’ll bake – a simple sponge cake. The reason why you could call this important is because it is a cake that can form the base of any cake you’d bake in the future. This recipe is by Noopur, and here is what she has to say about it.


    To start with – I love what homebakers.co.in is doing with the virtual classes! Kudos! So as goes for this recipe – it has an extremely special place in my heart ! It was the first recipe my mum ever baked, and in turn taught us! This used to be her base recipe for all the birthday cakes she ever baked for my sister and I – since we were kids! I baked this for the first tine when I was 12 and since then it became a favourite for almost all my friends and colleagues! This recipe, to a great extent, is a family tradition for me! And I am so glad I can bring this soft, spongy deliciousness to your kitchens now – to further spread the joy!


    Appended is my recipe for a simple, yet versatile, vanilla sponge cake. You can use this as a base recipe and convert this into numerous flavours (I’ve done that umpteen number of times in my kitchen!). This is one of the first recipes my mum ever taught me when I was 12 years old and it’s like a family tradition which I’m kinda passing on to everyone!


    Sponge Cake


    Ingredients-


    • All Purpose Flour – 2.5 cups
    • Baking Powder – 1.25 tsp
    • Whole Eggs (room temperature) – 6
    • Sugar – 1.5 cups (I use castor sugar, but you can also make this with granulated sugar at home)
    • Oil – 1 cup (You can use any neutral oil)
    • Vanilla extract / essence – 1.5 tsp

    Method-


    1. Grease and line an 8” cake pan and preheat the oven to 180 degrees C.

    1. Sieve the flour and baking powder together twice.

    1. Beat the eggs and sugar separately, until they double in size using a mixer.

    1. Gently add the oil & emulsify this mixture.

    1. Add the vanilla.

    1. Now, add in the dry ingredients in three parts and fold with a spatula using the cut and fold method as gently as possible without losing too much of the aeration created by foaming the eggs.

    1. Pour the batter in the lined cake dish and bake it for at least 25-30 mins at 180 degrees C, or until done. Doneness can be checked by using the skewer method. Insert a skewer in the centre of the cake and if it comes out clean (or with only a few moist crumbs) – it’s done!
